Took a bite out of Project 35 today. Made a new taco recipe, wrote personal notes to put in the mail in the morning, chose my verse to memorize over the next couple of weeks. Good times.
Ground Chicken Taco Recipe & Salad
- 1 lb ground chicken
- 1/4 white onion, finely grated
- 1/4 green bell pepper, finely grated
- 2 tsp garlic powder
- 1 tsp cumin
- 1/2 packet of mild taco season
- 1 small can of diced tomatoes with chilies
- pinch salt, pinch pepper
- 1 tbsp evoo
In non-stick, heat evoo, add onion & bell pepper until onion translucent, add chicken. Add spices to raw meat and then break up with wooden spoon until 3/4's cooked. Add can of tomatoes, stir, add 1/2 taco packet and then cook and stir every couple minutes until all liquid cooks off.
I made salad with 2 cup bed of Boston lettuce, scoop of taco meat mix, sprinkle of shredded sharp cheddar, 1/4 of avocado diced, scoop of pace mild salsa and a spoon of lf sour cream. Yum!!
